This article examines the sequence organization of food orders in a Japanese sushi restaurant. Privileging progressivity is argued to constitute a tool for the development of affiliative chef–customer relationships in a cross-cultural and cross-linguistic environment in which mutual comprehension is a ‘trusted’ outcome.
